Players will actually learn how to repair tables when running through the tutorial for Kuma Sushi Bar. To repair tables in your sushi bar, you'll need to enter edit mode by tapping on the hammer off to the left of the screen. These customers can appear randomly; however, they'll have a higher chance of appearing when you use the flyer or television ad in the bottom right of the game screen. When these special customers finish their meal, they'll have a chance to drop Dollars along with the normal currency that others pay for their meals using.

You can earn Dollars pretty regularly this way; however, the quickest way to repair all your tables and clean up the restaurant is definitely going to be to purchase the Dollars outright.
